Winemaking: We used the traditional way of producing semi-dry wines in our region. The fermentation process was halted before it was complete through cold shock. The result is a pleasant off-dry wine at 13.5% alc/vol and 10gr of residual sugar, with fruity aromas and taste. The wine was bottled without any contact with oak in order to preserve it’s light and fruity character.
Tasting notes: Vibrant color with aromas of black berries, wild cherries, forrest herbs, coffee. Great balance between acidity and sweetness.
Food pairings: roasted eggplants, sweet potato and parsnip, pasta bolognese, pizza, burgers, ribs with BBQ sauce; soft cheeses with ripe figs! Slightly spicy Chinese or Thai dishes. Also fresh or dried fruit – strawberries, cherries, plums.
Serving tips: 12-15 о С serve chilled!
The name “Bergule” comes from the Thracian root “-berg” (also “-burg”), from which are the words for river fortification, river bank, river fortress originate. The name was inspired by the words of our great-grandmother Milica, spoken on the banks of the Melnik River, which runs near our vineyards:
“Nothing is forever in this world. Even a river can dry up or change its bed. Only the banks remain.”
For us, the banks are a symbol of what remains. Therefore, “Bergule”.
