<\/p>\n\n\t\tWe consistently and systematically pursue our goal to showcase the best that the Melnik terroir has to offer. Beyond our accumulated vinegrowing and winemaking experience, we rely on the latest enological advancements and technological innovations when making our wines.<\/p>\n
Recently, we successfully installed and are now using the first Veriflow system in Bulgaria \u2013 the equipment is used to detect unwanted microorganisms in wine. This project started a year ago and has become a reality thanks to the incredible team involved and the collaboration between our winery\u2019s technology team, Mediclim Industry, and bioM\u00e9rieux Food Safety & Quality.<\/p>\n
With the Veriflow system, our enologists will be able to monitor the presence and development of microorganisms in wine. Precise control ensures the highest quality standards for the final product.<\/p>\n
Another innovative solution in our laboratory is the OenoFoss from Labconsult \u2013 an infrared spectrometer that can measure wine parameters at every stage of production \u2013 from grape juice, during fermentation, and in finished wines. This device gained great popularity among fans of the TV series \u201cVina\u201d (\u201cGrapes of Guilt\u201d) on Bulgarian National Television, as it was \u201cstolen\u201d in the storyline and then heroically \u201creturned.\u201d<\/p>\n
Our modern laboratory equipment also includes a temperature-controlled chamber for wine testing, an automatic titrator for determining acidity and sulfur dioxide levels in wine, and many other classic instruments for winemaking control.<\/p>\n
