The pack includes:
- Aplauz Rose – A delicate, elegant rosé crafted from two iconic Bulgarian varieties: Shiroka Melnishka Loza (Broad-Leaved Melnik Vine) and Mavrud. These two varieties coexist in a single vineyard exclusively at our estate, as Shiroka Melnishka only grows in the Melnik region, and we are the sole producer of Mavrud in the Struma Valley.
- Aplauz Viognier Sur lie – This wine was fermented and aged on the fine lees (sur lie) in Bulgarian oak barrels.
- Aplauz Chardonnay Sur lie – This wine was fermented and aged on the fine lees (sur lie) in Bulgarian oak barrels.
- Bergulé Sauvignon Blanc – A vibrant, light golden color with fresh green hues. An inviting nose with notes of delicate flowers and tropical fruits, grapefruit, candied lemon, and honey. Medium-bodied with excellent balance and flavors of ripe peaches and grapefruit.
- Bergulé Rose – A blend of Shiroka Melnishka Loza, Cabernet Sauvignon, Merlot, and Pinot Noir, this is our ultimate summer hit! The rosé is juicy, boasting a rich aroma of ripe strawberries. It pairs excellently with sheep’s milk cheese, fresh salads, pasta, seafood, grilled zucchini, or even desserts like peach panna cotta or strawberry mascarpone.
- Bergulé Viognier & Chardonnay – The wine that won a Double Gold medal in Japan and the "Best Wine for Japanese Tempura" award. Try it with lightly battered shrimp, mussels, or tempura vegetables.
Keratsuda

Characteristics: After a long wait, the iconic local variety – Keratsuda, is here again. The new vintage reveals the character of the Struma Valley in a bottle: a wine that is both refined and gentle, but possesses surprising complexity. Created for connoisseurs of authentic Bulgarian wines.
Pinot Noir & Sangiovese

Chill Melnik

Vinification: Fermented in stainless steel (inox) tanks.
Characteristics: Discover Chill Melnik – a unique, exceptionally fresh red wine crafted in the modern style of chillable reds. A contemporary and innovative take on the legendary native grape variety Shiroka Melnishka Loza.
Fermented in stainless steel, the wine preserves its pure, fruit-forward nature, bursting with crisp aromas of fresh strawberries and wild forest berries. With its pale ruby color, light body, and smooth tannins, Chill Melnik is the ideal companion for the warmer months. To fully appreciate its lively and fruity character, we recommend serving it well-chilled!

With the arrival of the spring season and the transition to white, rosé and lighter red wines, VILA MELNIK offers you a “SPRING FRESHNESS” package. It includes some of our established products as well as some new and little-known wines.
Our focus is on wines with less or no oak aging, which can be easily combined with any spring table.
- Aplauz Chardonnay Sur Lie – golden, dense and complex wine, vinified using French – sur lie technology;
- Orange Wine – Aromatic and dense, orange wine from Viognier and Keratsuda;
- BERGULE Viognier & Chardonnay – Light and fruity wine with aromas of flowers and white fruits;

Vinification: Grapes for the rosé are harvested two weeks earlier than for reds to preserve higher acidity and freshness. The varieties ferment separately in stainless steel, and blending is done after fermentation.
Characteristics: A wine that captivates with its delicate pink color and refined charm. Its fresh and intense aroma reveals forest strawberries, sweet peach, moss, and subtle herbal notes. On the palate it is juicy, fresh, and well-balanced, with a refreshing finish.
BERGULÉ СОВИНЬОН БЛАН
Vintage: 2025
Variety: Sauvignon Blanc – 100%
Alcohol: 12.5% vol.
Vinification: Semi-dry – fermentation is interrupted by cold, resulting in a residual sugar content in the wine.
Characteristics: The color is vibrant, light golden with fresh greenish hues. The aroma is delicate with nuances of tropical fruits, ripe pear and grapefruit. The freshness of green tones and a slight herbaceousness give the character of a classic Sauvignon Blanc, but with a pleasant semi-sweet element. The body is medium, with a soft, enveloping feeling of fruitiness, and the residual sugar gives the wine a roundness. The taste reveals ripe pineapple, peach and pear, with complementary grapefruit and nuances of candied lemon. The finish is medium long, supported by refreshing acidity and a slight herbal feeling in the middle. A perfect choice for summer evenings, Asian cuisine or just a glass of pleasure in good company.

Vinification: Maceration of skins with juice up to 24 hours, depending on the variety. Each fermented separately in stainless steel, blended after fermentation.
Characteristics: Aplauz Rosé enchants at first sight with its pale pink color and delicate shine. Fresh aromas of strawberry and raspberry, gently accented by floral and citrus notes. On the palate – fine, balanced, and refreshing.
Orange Wine
Variety: Viognier 75%, Keratsuda 25%

Vinification:
Fermentation with the skins for two weeks, followed by resting on the fine lees for four weeks.
Characteristics:
Orange wine is made from white grapes using a special technique. The key lies in the skins of the white grapes. While white wines are usually made by separating the skins from the juice, which then ferments alone, orange wines are created by allowing the skins to macerate and ferment together with the juice. From the skins come the deeper color (yellow, ochre, orange), the distinctive flavors and aromas, and the tannins that give orange wine its signature taste. In a way, it is white wine made by the technique of red wine.
GSM (Grenache, Syrah, Mourvedre) – barrel aged
Variety: Grenache, Syrah, Mourvedre

Vinification:
The wine is a classic blend, crafted in the style of France’s Rhone Valley. It is a cepage – the three grape varieties ferment together, creating an exceptionally harmonious, smooth, and full-bodied wine. Fermented in stainless steel, partially oak-aged.
