Winemaking: The grape juice has fermented together with the skins for 2 weeks, then the wine has rested on the lees for 4 weeks. From the skin contact, the wine gets it’s pale orange color, intense aromas and flavors, and tannins.

Tasting notes: Gentle, light orange color. Expressive aroma of tropical fruit, quince, pear, white cherries, freesia and acacia with fern and musk notes. The taste is fresh, with tannins, and a long mineral finish. A very complex, intriguing wine.

 

Food pairing: cheeses, chicken, light meats.

How do we make our orange wine?
Our orange wine is made from  Viognier and Keratsuda. The grapes come only from our own vineyards 5km from the town of Melnik.

Orange wine is a wine made from white grapes using a special technology. The key is in the skins of the white grapes. While white wines are made by separating the grape skins from the grape juice, which ferments on its own to become wine, in orange wines the skins of the white grapes are left to macerate* and ferment together with the grape juice. The skins give the orange wine its richer color (yellow, ochre, orange), flavor, and aroma. The skins also contain tannins, which give it its characteristic flavor. You could say that this is a white wine made using the technology of red wine.
