Welcoming August with a workshop for trahana, hand-rolled phyllo dough, and local gourmet delights

August at Villa Melnik began in the warmest and most authentic way possible – with the aroma of freshly kneaded dough, shared stories, and a journey back to the roots of Bulgarian tradition. During the first days of the month, we turned our winery into a lively stage for local heritage with our special workshop for traditional trahana and homemade hand-rolled phyllo dough (yufka). With joy and pride, we continue to organize events that revive ancient Bulgarian customs and celebrate the richness of our region.
Guardians of tradition: The magic of trahana and homemade yufka
We immersed ourselves in the magic of old Bulgarian culinary customs by kneading dough using an authentic recipe passed down from generation to generation. We rolled out thin sheets of dough for traditional homemade yufka and prepared trahana – one of our ancestors’ oldest superfoods, known for its incredible nutritional benefits and distinctive, fermented flavor.
While the dough sheets absorbed the August sunshine, drying slowly outdoors, we exchanged priceless old-time recipes and culinary secrets. The true inspirations and guardians of local traditions for the day were Baba Rozka from the village of Levunovo and Katya from the village of Harsovo. With endless love and expertise, they demonstrated the mastery of traditional dough making to our guests.
Tradition meets modern gourmet delights
To make the day even richer in flavor, we invited special guest producers from the region who share our passion for clean, authentic food:
BIOVAS – Petrich Tahini (Petrich): The family-owned producer of 100% pure, natural tahini gave an attractive live demonstration of how high-quality peanut tahini is made. Guests also learned about the rich health benefits of various seeds and nuts.
SNAILS GROUP (from the foothills of Mount Slavyanka): For the first time at the winery, we introduced Bulgarian escargot! The family farm, which breeds snails and produces premium gourmet products, introduced visitors to the world of snails – both as a sophisticated superfood for the palate and as a valuable ingredient in high-end cosmetics.
We believe that a modern winery should serve as a bridge between the past and the future. Every workshop and event at Villa Melnik is dedicated to keeping Bulgarian customs, crafts, and culinary heritage alive. Paired with a glass of our indigenous wines made from local Melnik grape varieties, these experiences remind us of who we are and where we come from.
